Hey! I’ve got a favourite that’s super easy and perfect for dieting buddies:
Veggie Omelette Muffins! 🧁🥚

Ingredients:
- 6 eggs (or 8 egg whites if you want it lighter)
- 1 cup chopped spinach
- 1/2 cup diced bell peppers
- 1/2 cup chopped mushrooms
- Salt & pepper to taste
- Optional: a little shredded cheese
How to make:
- Preheat your oven to 350°F (175°C).
- Whisk the eggs with salt and pepper.
- Stir in all the veggies (and cheese if using).
- Pour the mixture evenly into a greased muffin tin.
- Bake for 20-25 minutes until set and lightly golden.
