    Hey! I’ve got a favourite that’s super easy and perfect for dieting buddies:

    Veggie Omelette Muffins! 🧁🥚

    Ingredients:

    • 6 eggs (or 8 egg whites if you want it lighter)
    • 1 cup chopped spinach
    • 1/2 cup diced bell peppers
    • 1/2 cup chopped mushrooms
    • Salt & pepper to taste
    • Optional: a little shredded cheese

    How to make:

    1. Preheat your oven to 350°F (175°C).
    2. Whisk the eggs with salt and pepper.
    3. Stir in all the veggies (and cheese if using).
    4. Pour the mixture evenly into a greased muffin tin.
    5. Bake for 20-25 minutes until set and lightly golden.
